Rain, Snow, Sleet And A Recipe!

Yep, that's right, it's doing all of that stuff! What a miserable day here in the "Trailer Hood". We didn't do that much today. We had a staff meeting here at the campground this morning with muffins and coffee. TC is sick with whatever I have and he stayed in bed for most of the morning.

and I love leftovers!

We decided on leftovers for dinner. Tomorrow I plan on making Mexican Lasagna.

I had some requests for the recipe for the White Turkey Chili. I don't measure anything, but these are the ingredients. I did add garlic, chili power and cilantro every time I did a taste test.


1 cup of chopped spring onion
3 stalks celery, diced
3 medium poblano peppers diced
2 lbs ground turkey cooked
1 large container of chicken broth
3 15.5 oz cans cannelini beans (rinsed and drained)
2 15.5 cans white hominy (rinsed)
1/2 cup sour cream
1 can of nacho cheese soup
Some Shredded Mexican cheese mix (maybe 1/2 cup)Garlic


Cilantro
Chili powder
Oregano

Throw everything into a crock pot and add spices as needed.

Lime, avocado and sour cream for garnish.

We're getting a double-barrelled nor'easter blowing in here tonight through Friday. More rain and even possible snow! Yikes! Mexican lasagna is a favorite of mine to whip up. Yum! Hope you guys start feeling better soon!
