Today is another rainy day. Sherri the office manager and I went to the Weiss Bros trade show at the Hagerstown Community College. Weiss Bros has all kinds of cleaning products, Rubbermaid, paper supplies and so on. Sherri and I had a good time and a nice lunch. Sherri collected some catalogs so we can see what we might need for the campground this season.

It has been raining all afternoon. Tomorrow the weatherman tells us we are to get over 3 inches of rain. If we do get that 3 inches, we will definitely be flooded in. The creek is still very high from our last rain storm. We already have flood warnings all over the news. Time will tell.
I had a few requests for the Chili Rellenos Casserole. I hope everyone enjoys it.
Chili Rellenos Casserole
2 lbs ground beef
1/2 cup chopped onion
1 11 oz can of whole green Chile's (mild)
1 1/2 cups shredded cheddar cheese
1 1/2 cups milk
4 beaten eggs
1/4 cup flour
Brown ground beef and onion and drain. Place half of the Chile's in a 9x13 baking dish.
Sprinkle Chile's with some cheese, add beef, top with the rest of the Chile's, more cheese. Mix the eggs, milk and flour and pour over the meat and Chile mixture and top with the rest of the cheese. Bake at 350 for about 50 minutes or until a knife inserted in the center comes out clean. You can always make this recipe without the meat if you want a vegetarian dish.

I will be trying that casserole. It sounds so good, and we love one-dish meals with a side salad.
