Family Time And Sharing A Recipe!

I had today off and went to visit my mom. Robin (my sister), Jeff (my brother) mom and I all got together and had a nice lunch. We decided to meet Jeff where he works and eat there. Jeff works at an Assisted Living- Retirement Community-Nursing home facility. They have two cafe, diner type restaurants on the premises. The one we had lunch in was very nice. Jeff works at a lovely place. Robin, mom and I had a crab stuffed pretzel, a delicious crab and cheese mixture, served on pretzel bread. Jeff had hot roast beef, mashed potatoes and corn. We left happy and full.

I had a lot of requests for the "stuffed pepper" soup recipe. Usually when I cook, I look at several recipes on the Internet and pick out a few of them and put some of the ingredients together and add some of mine and make it my own. I thought about this recipe because I heard some of my friends talking about  stuffed pepper soup that they had at in a restaurant. I threw all of these ingredients in the crock pot and cooked on low for about 5 hours. I hope I remembered everything that I used. When I cook, I never measure anything, but I think these measurements are close:    


2 lbs of cooked ground beef
2 green peppers (chopped)
1 cup of chopped spring onion
2 large containers of beef broth
2 packs of Uncle Bens brown and wild rice (ready packs)
2 cans of chili ready tomatoes
1 small can of tomato paste
Italian seasoning and some garlic

Tonight we are having a chicken cordon bleu casserole (another new recipe), a tossed salad with bleu cheese dressing and of course some red wine.

I usually consider recipes a "suggestion" and go from there! This is defintely one I will try...I love cooking things in the crock pot. Thanks for sharing.

I'm learning to cook more things in a crock pot. I'm also learning to try to simplify my cooking in preparation for the RV kitchen!

Tonight I am making doubles of rice and will put half in a bag and freeze. I want to see how it comes out. I am so used to making fresh rice every time, but if it OK I will start doing it this way to save cooking time and space in the RV.
